A tasty main course, featuring delicious sweet onions!
List of Ingredients
1/2 cup white sweet onion (peeled and chopped)
3 large eggs
1/4 cup shredded mild cheddar cheese
1 tablespoon butter
1/4 cup chopped fresh tomatoes (optional)
Salt & Pepper to taste (after cooking)
Recipe
In a large non-stick skillet, melt butter over medium heat.
Add onions and cook, stirring occasionally, until lightly
browned (about 10 minutes or so).
Add eggs & cheese, mix until blended. Cook, stirring and
folding eggs, onions and cheese until eggs are fully cooked
and cheese melted. Serves 2. Serve hot.
