Cheese Omelet for One

List of Ingredients
3 eggs -- separated
1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons water
2 tablespoons heavy cream
1 tablespoon butter
1/2 cup medium Cheddar cheese, grated
1 tablespoon Parsley, chopped
Recipe
Preheat oven to 300. Beat egg whites, baking powder, and
salt together until egg whites are stiff. Beat egg yolks
with heavy cream and water. Fold yolk mixture into whites,
being very careful not to break down whites Spray skillet
with "Pam" and melt butter in the sprayed skillet. Pour in
eggs. Cook over low heat for about 8 minutes, or until
brown on the bottom. Place in the oven until top is set.
Before folding, add grated cheese and parsley. Fold omelet
in half and continue cooking for 2 minutes to be sure cheese
is melted. Serve hot. Garnish with chopped green onion if
desired.
