    Deviled Eggs1

    List of Ingredients

    6 hard-boiled eggs
    1 shallot, white part, chopped
    2 Tablespoons butter
    2 Tablespoons mayonnaise
    1 teaspoon prepared horseradish
    1 stalk green onion, chopped
    1 Tablespoon Capers, drained on paper towel
    Paprika


    Recipe

    Sautee shallot in butter until soft while hard-boiling the eggs. Let eggs
    cool. Aftercooling to almost cold, peel the eggs and slice them in half
    lengthwise. remove egg yolks by pressing gently on the outside of the shell
    opposite the yolk--yolk should pop out. In a small bowl, place cooked
    shallot, add egg yolks, mayo, horseradish, and green onion, and mash
    together.

    Pile back into egg whites and top with capers and a sprinkle of paprika.
