    Yield: 6 Servings

    List of Ingredients




    12 Eggs; hard cook, halved lengthwise
    1/2 cup Mayonnaise
    1/2 cup Chunky hot salsa; drain
    1/4 cup Finely shredded Monterey, Jack, Pepper, or sharp
    Cheddar cheese
    2 tablespoons Finely chopped cilantro
    Salt and pepper
    GARNISH
    Guacamole
    Finely minced fresh chives

    Recipe



    Combine egg yolks with mayonnaise, salsa, cheese, cilantro,
    salt and pepper. Lightly salt egg whites while they are
    empty shells. Refill egg whites. Garnish each half egg with
    a dollop of guacamole and a sprinkling of chives.



    note: to make guacamole, mash one ripe avocado very
    finely and mash a second one so it has small lumps. Squeeze
    in the juice of a whole lemon, or if you prefer, a lime. Add
    about a 1/4 cup of green taco sauce and/or Ortega green
    chilies--the small can of chopped ones is great. Add the
    juice and meat of 2 cloves garlic sieved fine, or about 1/2
    teaspoon of granulated garlic. Mix well and then add 1/2 cup
    sour cream and salt and pepper to taste. Mix and serve.
