Italian Eggs

List of Ingredients
4 large eggs, well beaten
1/4 teaspoon salt
1/2 cup cream
2 Tablespoons butter
4 ounces mushrooms,sliced
1 tomato,diced
2 Tablespoons fresh basil, chopped
4 tablespoons Monterey jack cheese
Recipe
Beat eggs together with salt and cream, set aside. Melt butter in skillet.
Add sliced mushrooms and cook, stirring often until lightly browned.
Add tomatoes and basil and stir to heat through.
Add egg mixture to skillet. Cook gently lifting to allow uncooked egg to run
under the cooked part. When no more will run under the cooked part, turn
omelet over once and remove from heat. Top with grated cheese, place under
broiler to melt. Serves two
