    1 Tube Jimmy Dean Breakfast sausage
    5 peeled hard boiled eggs
    1/2 cup pork rind crushed to powder
    1/2 cup shredded cheddar cheese
    1/4 cup chopped Jalepenos (Optional)*
    1 tsp garlic powder

    Mix all ingredients except eggs together like you would a meatloaf.
    Take 2 clumps of meat mixture ans press them out flat and thin (about
    1/4"). Take hard boiled egg and place it in between the 2 patties and
    seal the egg inside and roll it like a meatball. make sure egg is
    sealed inside.

    Repeat with the rest of the eggs. Place in a baking dish and bake at
    350o for 30 minutes. They might split while baking, but that's OK,
    still tastes the same. Stores well in the refridge and microwave for 30
    seonds to reheat. It's great "to go" breakfast.

    Also great topped with a spoon of salsa.

    * Instead of chopped Jalepenos I use a couple of dashes of the Jalepeno
    Tabasco sauce. It's easier to control flavor. I add just a hint.
