ENCHILADA CASSEROLE

List of Ingredients
2 lbs. ground beef
1 medium onion, chopped
1 teaspoon granulated garlic
3 to 4 cups cheddar cheese, shredded
6 low-carb tortillas
1can (#10 size) enchilada sauce
Recipe
Cook ground beef and onions together, brown and cook out almost all juices,
stir frequently enough that the ground beef is in small crumbles. Drain fat
if too much fat accumulates. Add garlic and stir in well. Put 1/2 cup
enchilada sauce in the bottom of a non-stick sprayed oblong glass baking
dish. Put a layer of tortillas (use 3 tortillas) on top of the sauce.
Add ground beef mixture. Make a layer of the cheddar cheese, save about a
cup of the cheese. Place a layer of the remaining tortillas. Pour remaining
enchilada sauce on the tortillas. Bake covered at 350 degrees for 30
minutes. Uncover and add remaining cheese, and bake uncovered for 10-15
minutes to brown cheese.
Serve with lettuce, tomatoes, chopped green onions, sour cream, and prepared
salsa. -about 8-10 servings
