    Fast and Fabulous Sausage Fajitas

    8 ounces (1/2 of 16-ounce package) Eckrich® Smoked Sausage, halved
    lengthwise, cut into 1/2-inch-thick slices **
    1 medium green bell pepper, cut into thin strips
    1 medium red bell pepper, cut into thin strips
    1 medium onion, cut into thin slices, separated into rings
    1 teaspoon dried oregano leaves
    1/2 teaspoon ground cumin
    1/8 teaspoon hot pepper sauce
    4 stone-ground whole wheat flour tortillas (8 inch)
    shredded lettuce, (optional)
    red or green salsa, (optional)
    sour cream, (optional)

    Combine sausage, bell peppers, onion, oregano, cumin and hot pepper sauce in
    medium skillet; cook over medium heat 8 minutes, or until vegetables are
    crisp-tender and sausage is heated through.

    Heat tortillas according to package directions.

    Spoon sausage mixture evenly down centers of tortillas. Top with lettuce,
    salsa and sour cream, if desired. Roll up.

    **other cooked meats may be substituted
