    Mustard Battered Fish

    Makes a light crispy coating and the fish will be moist and
    tender

    List of Ingredients




    2 pounds fish filets (preferably cod, bass or crappie)
    1/2 teaspoon salt
    1/2 teaspoon freshly ground black pepper
    1/2 cup SGWW flour
    3 Tablespoons prepared mustard--Grey Poupon?
    5-10 shakes Tabasco--use more if you really like it
    hot--less if not so hot
    1 Tablespoon horseradish
    1/4 cup water

    Recipe



    Mix all ingredients together in a large bowl. Coat each
    fish filet with the mustard batter. If batter is too thick
    and filets are not being well and thinly coated, add just a
    little more water to thin batter. Deep fry fish in a heavy
    pan or Dutch oven in very hot peanut or olive oil. Tabasco
    and horseradish will flavor the batter, but most of the heat
    will cook out while the fish are being fried. Serves 3-4
