    Beef Rolls with Sausage

    List of Ingredients




    ½ lb pork sausage
    1 cup finely chopped apple
    ¼ cup minced onion
    ½ cup crushed fried pork rinds
    1 tablespoon chopped parsley
    1 pounds thinly sliced round steak 1/4 inch thick
    2 tablespoons oil or shortening
    sprigs of rosemary, chopped finely, then crushed to equal 1 Tablespoon
    ¾ cup water
    ½ lb fresh mushrooms, cleaned and sliced
    1 cup thick cream (whipping cream)
    salt and pepper to taste (be sparing-- the pork rinds added some salt)

    Cook sausage with apple and onion in a sauté pan until meat is browned and
    well done. Add crushed fried pork rinds and parsley, stir well. .
    Cut steak into 4 pieces, pound with meat hammer until it is thin and evenly
    beaten
    Place about ½ cup stuffing near the center of each piece of meat.
    Starting at narrow end, roll up, tuck in ends, and fasten with toothpicks or
    skewers
    Brown roll-ups in oil, pour off any excessive fat.
    Add rosemary and water and cook, covered on low heat 1 ¼ hours, or until
    tender, turning often. Add more water as needed to keep moisture in pan.
    Scrape bottom of pan as needed to keep browned juices free.
    Add remaining ingredients, cook for 10 to 20 minutes until mixture thickens.
    Serves 4.
