    List of Ingredients




    1 cup low carb ketchup
    1/2 cup lemon juice, divided
    1 teaspoon mustard
    2 pounds ground buffalo
    3 slices low carb bread
    1/4 cup onion, chopped
    1 large egg, beaten

    Recipe



    Preheat oven to 350F. Use food processor or blender to turn bread into crumbs. In small bowl, whisk together ketchup, 1 tablespoon lemon juice, and mustard. Set aside. Combine buffalo, bread, onion, egg, remaining lemon juice and 2/3 of ketchup mixture. Mix well and place in 9 x 5 x 3 - inch loaf pan. Bake for one hour, top with remaining ketchup mixture and bake for 10 minutes more. Makes 8 (1 inch slice) servings.
