Low Carb and Lovin It on TV Food Network
Recipe Introduction
We make it ALL the time and LOVE it. I usually make 2 at a time and we
have leftovers for a few days. Then I make extra of the "low carb
ketchup" that you put on top, and keep it in an old ketchup bottle in
the fridge.
List of Ingredients
1 lb ground beef
2 eggs
1/2 c. grated parmesan
1/2 t dried basil
1/2 t dried oregano
pinch salt
pinch pepper
1/4 t minced garlic
1/4 c. diced red pepper
4 thin slices proschuitto
6 thin slices provolone
Recipe
Mix everything but the proschuitto and provolone in a bowl and make
sure it's well combined. Pat flat on a piece of waxed paper in a
flat strip as wide as your meatloaf pan and approx 1/2 inch thick.
lay out layers of proschuitto and provolone on the flattened meat
mixture. Roll it up and put it in the meatloaf pan. Cover in
homemade ketchup (2 sm cans tomato sauce, 1 sm can tomato paste, 1/4
c. splenda, 1T vinegar) (I usually use 1/2 batch of ketchup per
meatloaf).
Bake at 350 for about 50 minutes.
