    Meatball Dinner:
    bacon fat
    1/2 lb ground beef
    1 sm. onion
    1c mushrooms, sliced
    1 tsp. chopped garlic
    S&P to taste

    - melt bacon fat in frying pan over low heat while cleaning and slicing the onion into thin rings
    - add onion to pan and brown over med-high heat while making meat into balls
    - when onions are translucent, add garlic and meatballs, reduce heat to medium, and cover
    - when meat is done, add mushrooms, S&P; cover and continue to cook without stirring until ingredients start to brown on the bottom of the pan; stir and cover again to allow more browning

    Creamy Cheesy Spinach
    2 tsp sea salt
    10 oz box frozen spinach
    1/2 tsp dry mustard
    2T butter
    4 oz cream cheese, broken into small pieces

    - prepare spinach according to package directions with sea salt in the water; drain and return to pan
    - immediately add dry mustard, butter, and cream cheese and cover pan over lowest possible heat setting to allow to melt
    - once melted, stir thoroughly and serve

    This meal is also good with a crisp salad.
