    List of Ingredients




    1 1/2 lbs Ground Beef
    1/2 lb Pork Sausage
    1/2 large sweet onion
    1 Red Bell Pepper, finely chopped
    1 cup Monterrey Jack Cheese, grated (try using pepper Jack
    if desired)
    3 large eggs, well beaten
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1/2 teaspoon granulated garlic

    Tomato paste mixture:
    1 can (6 oz.) tomato paste
    2 Tablespoons lemon juice
    3 packets splenda
    1/4 teaspoon cinnamon
    1/4 teaspoon salt
    1/4 teaspoon pepper
    2 Tablespoon melted butter

    Preheat oven to 350 degrees.

    Mix all meatloaf ingredients well. Place mixture into
    non-stick sprayed loaf pan. Bake at 350 degrees until done.
    Top with tomato paste mixture, return to oven for 10
    minutes.

    for mixing meatloaf--use a mixer on slowest speed with a
    dough hook, or use your hands. If you don't like getting
    your hands "yucky" use disposable rubber
    gloves. Wash them after you have put them on your hands to
    remove any powdery residue.

    My friend Pat lives alone. She makes her meatloaf in really
    small pans that are about 3 x 5 x 2 inches, freezes the ones
    not currently needed and uses one pan for each person when
    cooking it.
