Pizza Frittata

-spray olive oil
-2 eggs, slightly beaten with 2 T water, salt and pepper, a few grinds of
Italian herb seasoning.
-1 oz. thin sliced tomato (about 6 paper thin slices)
-1/2 oz onion slices (about 3 thin slices)
-1/2 oz diced green pepper (about 1/8 cup)
-2 oz diced ham (about 1/2 cup)
-1/2 Hebrew national polish sausage, sliced (about 1/4 cup)
-1 oz mozzarella, shredded
Spray a low small casserole dish (mine is 4x8 inches) with olive oil. Pour
in egg mixture. Layer rest of ingredients in the order listed. Bake at 350
degrees Fahrenheit for 20-30 minutes. (It took 30 minutes for this one, but
usually with less ingredients takes 20 minutes.) I love making frittatas,
you can put anything in them almost and have it turn out good.
