CHICKEN DIVAN

List of Ingredients
4-6 cooked boneless, skinless chicken breast or thighs
(or the equivalent of any de-boned chicken meat or turkey.
Great for post holiday leftover turkey)
1 bunch of fresh broccoli--about 2 cups of spears or florets (12 cbs)
Dijon mustard, to taste (.5 - 2 cbs. will depend, but you shouldn't need
more than TBS)
1 c. cream (7 cbs)
1 c. chicken stock (1 cb. but check carb counts!)
1/2 c. mayonnaise (6-8 depending on brand)
1 1/2 c. shredded sharp cheddar or gouda (or your favorite cheese, single
or a combo of faves) (12 cbs.)
Recipe
Place chicken in a 9 x 13 pan or similar sized oblong casserole dish. Cook
broccoli until it's just barely fork tender. Place broccoli in pan with
chicken, spreading it around evenly.
Over low heat, heat cream and add cheese, stirring until it's melted. Add
mayonnaise, seasonings, and Dijon mustard to taste. Pour over chicken
mixture. Some people mix it up. I don't because you don't really need to.
Top with some orange or yellow peppers in Atkins suggested amounts--not too
much if you're on induction! These make it look very purty--I'm not just an
emotional eater--I'm an AESTHETIC eater! :)
Bake at 350 degrees for 30-40 minutes.
