    This is great with a combo broccoli and cauliflower veggie
    dish.


    List of Ingredients




    6 chicken breasts, boned and skinned
    12 oz (1 and a half, 8 oz. packages) cream cheese, softened
    in microwave
    3 tablespoons butter
    2 Tablespoons dried onion
    1/2 teaspoon granulated garlic
    1/2 teaspoon chili powder
    2 green onions (or 1 bunch chives)
    1/2 teaspoon salt

    12 bacon strips, partially cooked to the soft stage

    Pound chicken breasts to flatten to 1/2 inch thickness, and
    spread with softened cream cheese. Set into the
    refrigerator.
    In a sauté pan, melt butter and add onion, chives, garlic,
    chili powder, and salt, stir and mix together over heat
    until butter is melted and everything is blended together,
    allow butter to start to brown around edges, remove from
    heat. Place about 2 teaspoons of the butter mix on each
    chicken breast and spread it around.
    Roll up chicken breasts, not too snug--and secure them at
    both ends and in the middle with toothpicks. Bake at 350°F.
    for 30 minutes. Remove from oven and lay 2 bacon strips
    across each chicken breast, tucking them in at the ends with
    a fork or spoon--be careful--the chicken will be hot!
    Return chicken to oven, and bake, uncovered, at 400 for
    35-40 minutes or until juices run clear, and bacon is done.
    Serve with salsa on the side if desired. (Try warming the
    salsa--a whole new taste sensation!)
    Serves 6 adults (or very hungry kids. )
