    Cream Cheese Chicken

    Source of Recipe

    Low Carb Luxury--shared by Sherilyn

    Recipe Introduction

Serving Ideas : Vegetables. I served this with a low calorie Bubble and Squeak
dish of leftover cauliflower and broccoli.

NOTES : Prep. Time: 15-20 min Cook Time: 40 min Difficulty: Easy
The dish was really good! Definitely a keeper. The cream
cheese and onion made it. I wouldn't omit the bacon
though you can use 2 slices. --Sherilyn

2 boneless skinless chicken breast halves
    1/2 clove garlic
    1/8 cup cream cheese
    1/4 cup grated cheddar
    1 tablespoon heavy cream
    1/8 teaspoon crushed garlic
    1/2 large green onion
    2 pieces cooked bacon

Bake chicken at 350 F for approx 40 minutes. In a small bowl combine cream
cheese, heavy cream, garlic, green onion, cooked chopped bacon, and 1/4 of
the cheddar cheese. Spread chicken with the cream cheese mixture and top
with remaining cheese. Broil in oven until melted.

    My Changes
It was too hot a day to prepare this in the oven so I modified the recipe
    for the stove top. I pan-fried the chicken in a little butter, covered;
draining when it went into poach-mode. I added a little more butter as
needed. Our chicken breasts are quite large so I increased the cream
cheese, used 2 green onions, 3 pieces of bacon and a tad more heavy cream
though not much more. I used Jack cheese and probably used a bit more of
that. Also used garlic powder because after chicken was cooked, I placed
bacon on top, then layered cheese on top, then microwaved to melt cheese.
Placed the spoonful of cream cheese and green onions on top of that.
Basically, I used this recipe as a guide line.

I always microwave bacon no matter what the recipe says to do with it.
