    Greek-style Lemon Chicken

    3 tbsp olive oil
    Finely grated peel of 1 lemon
    juice of 1 lemon (about 2 Tablespoons)
    2 minced garlic cloves
    1/2 teaspoon dried leaf oregano
    1/2 teaspoon dried dill leaves
    1/2 teaspoon freshly ground black pepper
    4 skinless, boneless chicken breast halves

    In a zip-lock plastic bag, place together oil, lemon peel,
    lemon juice, garlic, oregano, dill and pepper. Mix together
    and add chicken. Turn chicken to coat, refrigerate, covered,
    turning now and then when you think about it.

    Next day: Grill chicken breasts on a George Foreman type
    grill for 4-6 minutes or until juices run clear and all pink
    is gone from thickest part of chicken breast. Salt lightly
    before serving.

    Discard marinade.
