Italian Style Chicken

List of Ingredients
2 boneless, skinless chicken breasts
2 Tablespoons pesto sauce (from a bottle)
2 ounces thinly sliced Italian seasoned pepperoni (or use ham or proscuitto)
1/2 cup ricotta cheese
2 cloves garlic crushed
3 tablespoons olive oil
1/2 cup grated mozzarella cheese
1/2 cup no-sugar-added tomato sauce
2 teaspoons Italian seasonings herb mix
2 tablespoons grated Parmesan cheese
Recipe
With meat mallet, pound chicken to 1/4 inch thickness. Spread each breast
with one Tablespoon pesto. Layer on pepperoni and ricotta cheese. Roll up
the chicken, anchor with wooden picks. Crush garlic, sauté briefly in olive
oil, and then sauté chicken rolls until browned and cooked. Remove and put
in small oven baking dish. Layer mozzarella, tomato sauce, seasonings, and
Parmesan cheese on top of chicken, in that order. Bake at 350 degrees until
cheeses are melted.
