    Our family loves chicken in every way possible! My favorite Kimkins style recipe is spicy jerk style. Ideal for a Father's Day or graduation BBQ celebration!

    Super fast, perfect for impromptu entertaining. Your guests will be surprised by the spicy Caribbean flavors. If my nasturtiums are blooming, I'll add a few gorgeous edible blossoms to the greens for added punch!

    4 boneless chicken breasts, skin removed
    2 tsp Jamaican jerk seasoning
    1 bag assorted greens
    2 celery, halved & sliced
    3 radishes, halved & sliced
    2 baby carrots sliced into ribbons
    8 yellow grape tomatoes, halved
    1 scallion, chopped
    1 tsp garlic powder
    1 tsp white pepper (black OK)
    1 tsp salt

    In a large Ziploc bag combine chicken, jerk seasoning & spices. Shake to coat, let marinate for 1 hour or overnight in the refrigerator.

    Grill over medium hot charcoals or spray a nonstick skillet with Pam spray and cook chicken for about 3 minutes on each side. Remove from heat, let rest.

    Arrange greens and other veggies on 4 serving plates. Slice chicken diagonally and place on top of the greens. Frisee salad is especially pretty and nasturtium blossoms have a delicate peppery flavor.

    Serve with low calorie low carb salad dressing and enjoy!
