    Oven Roasted Carnitas

    4 lbs bone in pork shoulder or country style pork ribs
    2 cans beef broth
    1 Tbsp pepper corns
    1 bay leaf
    1 tsp thyme
    1 tsp oregano
    3 Tbsp chopped garlic

    Preheat oven to 350. In dutch oven cover meat with broth and other
    ingredients. Roast meat uncovered for 2 1/2 hours. Add more liquid
    (water) if necessary. Lower heat to 275 and cook another two hours.
    Moisten with stock or water from time to time. Meat is done when falling
    off the bone. When ready to serve, chop roughly or just pull meat apart.
    Rib bones are good for nibbling (cooks prerogative). Sometimes meat
    cooks faster than recipe calls for. Also keep moist so meat does not dry
    out.
