Pulled Pork Barbecue

List of Ingredients
1 (5-pound) bone-in pork loin roast
1 medium onion, sliced, separated into rings
1 or 2 garlic cloves, sliced
3 or 4 whole garlic cloves
2 cups Barbecue Sauce (see below)
1 teaspoon lemon juice
2 Tablespoons red wine vinegar
Tabasco sauce to taste
Recipe
Place the pork in a slow cooker. Top with the onion,
sliced garlic and whole garlic cloves. Do not add any
liquid. Cook on High for 5 hours or until the pork pulls
apart easily. Remove to a platter to cool. Pull the pork
apart and place in a large skillet or Dutch oven. Add the
Barbecue Sauce, lemon juice, red wine vinegar and Tabasco
sauce. Cook over medium heat until bubbly.
SERVES: 4 to 6
INGREDIENTS for LC Barbecue Sauce:
10 envelopes Splenda
1/4 cup vinegar
2 Tablespoons lemon juice
1/4 cup Worcestershire sauce
2 cans (5 oz each) tomato paste
1 cup water
dash cinnamon (about 1/8 teaspoon)
1 teaspoon dry mustard
1 teaspoon chili powder
Tabasco sauce to taste
Salt to taste
TO PREPARE Barbecue Sauce:
Combine the splenda, vinegar, lemon juice, Worcestershire
sauce, tomato paste, water, cinnamon, dry mustard, chili
powder, Tabasco sauce, and salt in a saucepan. Mix to an
even smooth consistency. Bring to a boil over medium heat.
Remove from the heat. Use as a sauce or as a baste for
meat.
