1 cup bulgur wheat
1 1/2 cups boiling water
1 tsp salt
1/4 cup lemon juice
1/4 cup olive oil
2 tomatoes, diced
3 cups chopped parsley or cilantro
4 green onions chopped with tops
2 cloves garlic, chopped
I make this in a pyrex casserole dish with a lid. Pour boiling water over
bulgur wheat and salt. Cover and let it set for 30 mins. Stir in lemon
juice and olive oil and chill for 2-3 hours. Add tomatoes, parsley (or
cilantro) and green onions and gently toss before serving.
For those who like the idea of eating raw, you can use cold water and let it
set for 3 hours.
