    Prep and cook time: About 15 minutes
    Makes: 4 Servings

    List of Ingredients




    3 cups (about 12 oz.) thinly slice zucchini
    1 medium-size firm-ripe avocado
    1 cup (about 1-1/2 oz.) arugula or watercress sprigs, rinsed and crisped
    1/4 cup Olive Oil
    2 tablespoons lemon juice
    Salt and pepper
    8 Greek olives (optional)

    Recipe



    1. Place zucchini in a wide, shallow bowl. Peel, pit, and slice the avocado.
    Arrange avocado and arugula over zucchini.

    2. In a small bowl, combine oil and lemon juice; season to taste with salt
    and pepper, then mix well. Pour dressing over salad and mix lightly. Garnish
    with olives, if desired.
