Recipe Introduction
Jicama is a low carb vegetable that looks almost ugly--like a large, brown,
rough-skinned turnip. It has a crispy texture similar to potatoes and has a
taste of its own. It is delicious almost any way it is prepared, raw or
cooked. Peel the vegetable and cut it into julienne strips or into
matchsticks or strips about as thick as French fries. It can even be French
fried and will come out rather similar to potatoes cooked in the same way.
List of Ingredients
1 pound meat such as flank steak, top sirloin steak, or skirt steak (steak
should be cut into thin strips), shrimp tails, or chicken (chicken should be
raw, boned and chopped)
1/4 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon freshly ground pepper
1/4 teaspoon ground cumin
1/2 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons fresh lime juice (1/2 lime)
1 onion, cut into half horizontally and then slicing the halves vertically,
chopped slightly
1 red bell pepper, seeded and cut into strips
1 yellow bell pepper, seeded and cut into strips
3 ounces jicama, peeled and cut into thin strips (1 cup)
1 cup coarsely chopped fresh cilantro leaves
1/3 cup olive oil
1/4 cup low-carb green taco sauce (such as La Victoria)
1 cup sour cream
8 (9-inch) low-carb tortillas
2 limes (or lemons), cut into wedges
Recipe
1. Place meat in a large zip lock bag. In a small bowl, combine chili
powder, salt, pepper, cumin, garlic powder and onion powder. Sprinkle
thoroughly over both sides of meat. Sprinkle lime juice over top, close and
marinate in the refrigerator 1 1/2 hours or up to overnight.
2. Preheat a large heavy wok to very hot, add oil to the bottom, toss in
vegetables and add marinated meat along with any juice that accumulated,
stir fry until the meat is done, and the vegetables are crisp-tender. (5 to
10 minutes depending on the size of your wok) Transfer to a platter, cover,
and keep warm while preparing tortillas.
3. Place tortillas on grill or in a lightly oiled, heated skillet, and cook
15 seconds per side. Fold tortillas into 1/4 ths. Wrap in aluminum foil to
keep warm.
4. Arrange cooked fajitas on a serving platter surrounded by cooked
tortillas. Add taco sauce, sour cream and limes on the side. Let each
person serve himself.
