Eggplant Marinara

I make this in a small baking dish,
serves 1-2 depending on how hungry you are!
List of Ingredients
Eggplant
Olive oil or peanut oil
Mozzarella slices
Freshly grated parmesan cheese
Sugar-free marinara sauce
Recipe
Slice about half of an eggplant. I make the slices
relatively thin, but it's up to you. Make 3 slices.
Warm up peanut or olive oil on a skillet (Suzanne
recommends peanut, but I used olive). Fry each slice
of eggplant until brown and crisp.
In a small baking dish, layer marinara sauce, 1 slice
eggplant, 1-2 slices mozzarella and layer of parmesan.
Repeat 3 times, ending with the parmesan on top.
Bake until bubbly.
