    Rani's Sweet & Sour Cabbage

    8 strips bacon, cooked crisp and crumbled (reserve grease)
    1 medium head cabbage, shredded or sliced thinly
    1 onion, very thinly sliced
    1 teaspoon caraway seeds
    3 tablespoons apple cider vinegar
    2-3 packets artificial sweetener (to taste)
    salt (optional - to taste)

    Cook the cabbage and the onion in the bacon grease over medium heat, turning constantly to coat it well with the fat.
    Cook until tender.
    Sprinkle with crumbled bacon, caraway seeds, and apple cider vinegar.
    Toss lightly to combine.
    Remove from heat and sprinkle with 2-3 packets of artificial sweetener and salt to taste. Toss well and serve warm.
    Serves 4 generously.
    Note: The original recipe called for a grated Granny Smith apple (18 gm of carbs), which really does add to the flavor, but it's good without, too.
