    Blended Broccoli Soup

    List of Ingredients




    - 1 TBSP Coconut Oil
    - 2 med greent onion, coarsely chopped
    - 2 cloves garlic (I used like 5 or 6)
    - 1 large head fresh broccoli, washed and chopped
    - 1 TBSP basil leaves, dried
    - 2 cups chopped spinach, kale, turnip greens, collards, Swiss chard or other dark leafy greens (I have used both spinach and green chard - I like the chard better)
    - 4 cups veggie or chicken broth
    - 2 cups coconut milk (I use 1 can of the Thai kitchen Premium Coconut Milk)
    - 1 tsp sea salt or kelp seaweed
    - 2 dashes hot pepper sauce

    Recipe



    1. In large soup pan, melt oil and saute green onions and garlic for 1-2 minutes until translucent.
    2. Add chopped broccoli and stir. Cook over med. heat, stirring, until broccoli turns bright green.
    3. Add basil and additional chopped greens. Cover and steam-saute for 3-4 more minutes.
    4. Transfer vegetables into food process or blender (I GO AHEAD AND ADD THE CHICKEN BROTH TO THE POT AND JUST USE MY HAND BLENDER TO BLEND IN THE POT - MUCH EASIER). If using a blender, process in two batches. Add a little liquid and process until vegetables start to be smooth.
    5. Add remaining liquids, salt and ho pepper sauce. Process on high until smooth. Taste. Reheat gently, if necessary to bring back up to temperature. This is usually not necessary. Serve.

    Serves 4 (WE GET MUCH MORE OUT OF IT THEN FOUR SERVINGS!)
