    Chunky Chicken Soup

    adapted from: family favorite soups and slow cooker recipes

    List of Ingredients




    3 boneless, skinless chicken thighs, cut into 1 inch pieces
    1 cup celery sliced
    1/2 cup chopped onion
    2 Tbsp oil
    6 cups chicken broth
    1 1/2 cup sliced carrots
    1 tsp thyme
    1/2 tsp salt
    1/4 tsp pepper
    1 1/2 cup frozen peas

    Recipe



    In sauce pan, cook chicken, celery, and onion in oil until chicken juices run clear. Add broth, carrots, thyme, salt, and pepper. Bring to boil. Reduce heat; cover and simmer for 45 minutes or until veggies are tender. Stir in peas. Cover and simmer 10 minutes more.

    Makes 8 servings
