    Cilantro-Lime Chicken Soup

    Serves 4

    3 boneless chicken breasts, cubed into 1/2" pieces
    1/2 cup chopped onion
    1 clove garlic, pressed
    1/2 tsp chili powder
    1/4 tsp ground cumin
    32 ounces chicken broth
    1 can diced tomatoes, undrained
    1 can chopped green chilis, undrained
    4 tsp fresh snipped cilantro
    1/2 cup shredded cheese, optional
    4 thick slices fresh lime

    In a 4 qt pot, cook chicken on medium-high heat for 3 minutes. Add chopped
    onion, garlic, chili powder and cumin and cook for 2 minutes. Stir in broth,
    tomatoes, and green chilis. To freeze, ladle into containers and freeze at
    this point. Thaw completely and bring to a boil and simmer for 10 minutes.

    Ladle into 4 bowls and add shredded cheese and cilantro. Squeeze lime over
    top of soup.
