    Easy Chili

    adapted from "Wholly Frijoles!", cookbook by Shayne Fischer--shared by Blair
    1 lb 80% lean ground beef (I add about 1/4 lb ground heart)
    15 oz can pinto beans, drained (use your own NT beans! Throw in some
    kidney beans, too!)

    1 chopped onion
    1 can chopped stewed tomatoes (I use organic, fire-roasted and blend
    them in a blender first)
    1 clove minced garlic (I never use just one clove! at LEAST 2 or 3!)

    2 TBLSP chili powder
    1 tsp ground cumin
    1/4 tsp. ground allspince
    Sea salt & pepper to taste

    (Adjust spices to your taste. I always use more cumin(I don't measure
    I just add, taste, add, taste, etc.), but I think the chili powder is
    about right....taste it first!)

    Brown ground beef in chopped onions. Drain excess fat (if desired; I
    don't). Add remaining ingredients and simmer together for 20-30 minutes.

    Makes about 8 bowls of chili. I put out chopped green onions, creme
    fraiche, and shredded cheese as garnish. Usually I double the recipe
    and freeze. It freezes well.
