    Rani's Low-carb Cook's Nook Chat on AOL

    List of Ingredients




    1 large onion, chopped
    1/2 pound of bacon, chopped
    One 15-ounce can of pumpkin
    1 cup water
    2 cups sugar-free apple cider (reconstituted from Alpine brand mix or you could use Sam's Choice Apple Burst drink)
    1/4 cup brown Sugar Twin
    4 cubes chicken bouillon
    salt, to taste
    2 teaspoons white pepper
    1" inch chunk of ginger, chopped or grated

    Recipe



    Saute lightly onion, ginger, and bacon in large pot.
    Add pumpkin, water, apple cider, brown Sugar Twin, chicken bouillon, salt, white pepper, to the pot.
    Cover and simmer for 1 hour.
    Stir frequently.
    Blend to thicken in blender-size batches.
    Serve with a dollop of sour cream.
