    List of Ingredients




    12 ounces Chicken breast, cooked and cut into strips
    6 cups Chicken broth
    1 medium Carrot, peeled and grated
    2 Chipotle peppers, minced
    1 1/2 cups Eden's Black Soybeans, drained
    2 Green onions, chopped
    1 Tablespoon Cilantro, chopped
    1 large Tomato, diced
    1 medium Avocado, seeded, peeled and diced (optional)

    Recipe



    Combine the cooked chicken, broth, chipotle peppers, carrot and
    black soybeans in a medium saucepan. Simmer for 20 minutes. Combine the
    onions, cilantro, tomato and avocado in a mixing bowl. Serve the
    soup warm, garnished with the tomato mix.

    Chipotle (dried, smoked jalapenos) are available canned in the
    Mexican food section of most large supermarkets.
