    * 2 smoked ham hocks
    * 3 bunches collard greens, tips cut and julienned
    * 1 chopped onion
    * 3-4 dashes meat tenderizer (optional)
    * Salt and pepper to taste
    * 3 hand-pinches brown sugar substitute
    * 3 dashes of Soul Seasoning(garlic powder, salt, pepper, paprika
    and chili powder [equal parts]) or your favorite seasoning
    * 3-4 dashes Accent (optional)
    * 3 dashes Old Bay seasoning (optional)

    Wash collard greens and soak in salted ice water for 10 minutes. Drain
    and rinse. Season with tenderizer, salt and pepper (seasoning the
    night before cooking results in better flavor).

    In a large pot, boil ham hocks for 60-90 minutes until the meat falls
    off the bones. Remove bones. Add the collard greens, onions, and brown
    sugar. Add Soul Seasoning, Accent and Old Bay to taste.

    Cover and simmer for at least 2-3 hours, preferably all day.

    For the best collard greens, alternately simmer for an hour, then
    remove from heat for an hour and allow to soak, then simmer for
    another hour, repeating until serving time.
