    12 hard-cooked eggs
    1/8 to 1/2 C mayonnaise
    2 to 3 tsp prepared yellow mustard
    3 T sweet pickle relish
    1to 2 tsp dried minced onion
    1/4 tsp salt
    dash white pepper
    paprika, optional



    Recipe



    Slice eggs in half lengthwise, and carefully remove yolks. Mash yolks with a fork or a pastry blender until very fine. Mix mayonnaise and mustard (start out with 1/8 C mayonnaise and 1 to 1 1/2 tsp yellow mustard). Add mayonnaise mixture to egg yolks and blend. Add relish, dried onion, salt and pepper to egg yolk/mayo mixture; stir well. Add more mayo/mustard if needed until desired consistency is reached.

    Spoon the yolk mixture into egg whites. I use a cake decorating tool with a large open tip (fill center of cylinder of the decorating tool with yolk mixture and use a large decorating tip to fill eggs) Sprinkle with paprika if desired.

    Variation: Can use pepper relish in place of pickle relish.
