Baked Reuben Chicken
4 whole chicken breasts, boneless, skin on, cut in half
1 (16 oz.) can sauerkraut, drained and rinsed
4 large rectangular slices natural Swiss cheese
1 1/4 C (1 bottle) thousand island dressing
Place chicken in a 9 x 13 pan. Sprinkle with pepper. Layer sauerkraut on top and a piece of sliced cheese over all. Drizzle and spread thousand island dressing over top. Cover with foil. Bake 325 for 1 1/2 hours. If want it browned on top, drain off juices and broil for a few minutes. Drain off juices either way. Top with parsley
