    Grilled Chicken with Orange Salsa

    2 T ground coriander
    2T ground cumin
    1 T ground pepper
    2 tsp salt
    2 lb boneless, skinless chicken breasts (9 halves)
    4 tsp vegetable oil

    Toast spices for 45 seconds. Add salt. Flatten chicken slightly. Brush both sides of chicken with oil and coat with spices. Grill. Serve with orange salsa.

    Orange Salsa for Grilled Chicken
    4 navel oranges, peeled and diced
    1 small red onion, diced
    1/4 C lime juice
    1/4 C fresh parsley, chopped
    1 clove garlic, minced
    ground pepper and salt to taste

    Mix all and serve with grilled chicken. Serve with red potatoes with garlic and green beans with dill.
