Pork Chops with Dijon Cream Sauce

4 (4 oz) center-cut pork loin chops; boneless, 1/2 inch thick
1/2 tsp salt
1/2 tsp coarsely ground black pepper
cooking spray
2/3 C chicken broth
3 T Dijon mustard
2/3 C half and half or evaporated milk
1 to 2 tsp cornstarch; if needed to thicken sauce
Recipe
Trim fat from chops. Sprinkle both side of chops evenly with salt and pepper. Coat a large non-stick skillet with cooking spray; place over medium-high heat until hot. Add chops to skillet and cook 3 to 4 minutes on each side or until browned. Remove chops from skillet, and keep warm. Add broth to skillet, stirring to loosen browned bits. Combine mustard and half and half; add to skillet. Reduce heat, and simmer for 7 minutes or until sauce is thickened slightly. Thicken with cornstarch if needed. Spoon sauce over chops and serve. Makes 4 servings.
