Vegetable Latkes
2 � C zucchini, shredded ( 2 large)
1 C potatoes, shredded
1 C carrot, shredded
� C onion, shredded
3 eggs
� C fresh parsley, chopped
� tsp salt
1/8 tsp pepper
� C flour or matzo meal
� C veg. oil for frying
Mix all ingredients together. Drop in oil in a skillet and fry in flat patties until golden brown; drain on paper towels and serve immediately.
