Corn Dog Muffin Bites
1 pkg. (8.5 oz) corn muffin mix
½ cup shredded Cheddar cheese –about 2 oz
1 egg
1/3 cup milk
1 Tbs. honey mustard
4 bun-size hot dogs, cut into ½” pieces
Optional: ½ cup mustard & ½ cup ketchup
Preheat oven to 350 degrees. Coat 32 mini muffin cups with cooking spray. In bowl, stir together muffin mix, cheese, egg, milk and honey mustard until blended. Stir in hot dog pieces. Drop batter by tablespoons into muffin cups. Bake 10-15 minutes or lightly browned and toothpick inserted in center comes out clean. Cool on rack for 5 minutes.
Optional: In small bowl, swirl mustard with ketchup. Serve with muffins.
