    1 cup flour
    1 cup yellow cornmeal
    1/4 cup sugar
    1 tbsp. baking powder
    1/2 tsp. salt
    2 egg whites, lightly beaten
    1 cup buttermilk
    1/3 cup unsweetened applesauce

    Recipe



    In a large bowl, stir together the flour, cornmeal, sugar, baking powder, and salt. Make a well in the center of the mixture. In a small bowl, stir together the egg whites, buttermilk, and applesauce. Add the buttermilk mixture to the flour mixture and stir just until moistened. Pour the batter into a greased 8 x 8 x 2 baking pan. Bake at 400º for about 25 minutes or until a toothpick inserted into the center comes out clean
