Easy Oatmeal Cake

1 c. quick-cooking oatmeal
1 c. boiling water
1/2 c. butter
1 c. brown sugar
1 c. white sugar
2 eggs, beaten
1 1/4 c. flour
1 tsp. baking soda
1 tsp. cinnamon

Topping:

3/4 c. sugar
1/2 c. evaporated milk
1/2 c. butter
1 tsp. vanilla
1/2 pkg. coconut

Recipe



Mix oatmeal, water and butter in bowl and set aside for 30 minutes. Mix sugars and eggs with oatmeal mixture. Add flour, soda, and cinammon. Mix well and pour into a greased, floured sheet pan. Bake for 30 minutes at 325 degrees.
Prepare topping. Bring sugar, milk, and butter to soft-ball stage (234 degrees.) Add vanilla and coconut. Spread over warm cake. If desired, place cake briefly under broiler to lightly browned.
