    Amish Ranch Potato Casserole

    List of Ingredients

    6 medium Red potatoes, up to 8
    1/2 cup of sour cream
    1/2 cup of prepared ranch salad
    1/4 cup of bacon bits or cooked bacon, chopped up
    2 tablespoons of minced parsley
    1 cup (4 oz) cheddar cheese, shredded

    Topping

    1/2 cup of Shredded cheddar cheese
    1/4 cup of melted butter
    2 cups of lightly crushed corn flakes


    Recipe

    Cook potatoes until tender. Quarter (leave skins on) and set aside. Combine sour cream, dressing, bacon, parsley, and 1 cup cheese. Place potatoes on greased 9 x 13 inch baking dish. Pour sour cream mixture over potatoes and gently toss. Top with 1/2 cup of cheese. Combine corn flakes and butter. Sprinkle over casserole. Bake at 350ºF. for 40-45 minutes. 8 servings.
