ZUCCHINI DESSERT

4 c flour
1-1/2 c sugar
3 sticks margarine, softened
2 tbsp water

Mix crust until crumbly. Press half of mixture into 9x13 pan. Bake at 350° for 5-10 minutes. Let cool. Spread zucchini filling mixture (recipe to follow) over crust. Crumble other half over top. Bake at 350° for 50 minutes.

Zucchini Filling:

8 c zucchini (peeled and seeded), sliced or diced
2/3 c lemon juice
1 c sugar
2 tsp cinnamon

Mix ingredients together and cook over medium heat about 50 minutes. Let cool.

Recipe
