Apple Pumpkin Muffins

Muffin

2 1/2 cups flour
2 cups sugar (or less)
1 TBS pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 cup cooked pumpkin
1/2 cup vegetable oil
2 cups chopped apples

Streusel

1/4 cup + 2 TBS sugar
2 TBS + 2 1/2 tsp. flour
1 tsp. cinnamon
2 TBS butter

Recipe



Combine flour, sugar, pie spice, soda and salt. In a separate bowl, combine eggs, pumpkin, and oil. Mix well and stir into dry ingredients until mixture is just moist. Fold in apples. Fill muffin cups 2/3 full.
In a small bowl, combine first 3 streusel ingredients. Cut in butter until crumbly. Sprinkle over muffin batter. Bake at 350 degrees for 25-30 minutes.
