Cinnamon Applesauce Muffins

1 1/4 c. oat bran cereal, uncooked
1 c. whole wheat flour
2 tsp. ground cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
3/4 c. unsweetened applesauce
1/2 c. honey
1/4 c. vegetable oil
1 egg
1 tsp. vanilla
1/4 tsp. chopped walnuts

Recipe



Preheat oven to 375 degrees. Grease muffin tin. In medium bowl, combine oat bran, flour, cinnamon, baking powder, soda, and salt. In large bowl, combine applesauce, honey, oil, egg and vanilla. Stir in dry ingredients; mix well. Stir in nuts. Fill muffin tins until almost full. Bake 15-20 minutes until golden brown.
