Irish Coffee Muffins

•1 ¾ cup flour
•¼ cup sugar
•2 ½ tsp baking powder
•1 T instant coffee
•1 egg, slightly beaten
•¼ cup Baileys Irish Cream
•½ cup half & half cream
•1/3 cup vegetable oil
•½ cup mini chocolate chips

Recipe



In a large bowl, mix dry ingredients. In a small bowl, combine Baileys, half & half, oil and egg; add to dry mixture and stir just until combined. Stir in chocolate chips. Pour mixture into muffin tin that has been sprayed. Bake in preheated 400 degree oven for 20 – 25 minutes. Cool on rack for 5 minutes then remove from pan
