1/2 lb. Saga blue or other blue cheese, at room temperature.
1/2 cup walnuts, toasted and coarsely chopped
2 tablespoons milk
6 thin slices square dark pumpernickel bread
Parsley for garnish
Instructions
About 30 minutes before serving or early in day:
Cut rind from blue cheese, if any. In small bowl, mix blue cheese, toasted walnuts, and milk until
blended.
Cut each slice pumpernickel bread diagonally into 4 triangles. Onto each triangle spoon 1 heaping
teaspoon blue cheese mixture. Garnish each triangle with parsley. Cover and refrigerate if not
serving right away.
