    Blue Cheese Canapes

    This makes an elegant looking and good tasting appetizer.


    List of Ingredients


    • 1/2 lb. Saga blue or other blue cheese, at room temperature.
    • 1/2 cup walnuts, toasted and coarsely chopped
    • 2 tablespoons milk
    • 6 thin slices square dark pumpernickel bread
    • Parsley for garnish


    Instructions


    1. About 30 minutes before serving or early in day:
    2. Cut rind from blue cheese, if any. In small bowl, mix blue cheese, toasted walnuts, and milk until
      blended.
    3. Cut each slice pumpernickel bread diagonally into 4 triangles. Onto each triangle spoon 1 heaping
      teaspoon blue cheese mixture. Garnish each triangle with parsley. Cover and refrigerate if not
      serving right away.


    Final Comments


    Makes 24 canapes.
    Each canape: about 65 calories, 4 g fat, 7 mg cholesterol, 175 mg sodium
