    Makes about 2 cups, enough for 6 servings
    For a bold cheese flavor, use a strong blue such as Roquefort, Stilton, or Gorgonzola in this recipe.

    List of Ingredients




    1 cup low-fat cottage cheese
    ¼ cup boiling water
    1 cup low-fat sour cream
    3 tablespoons crumbled blue cheese
    2 tablespoons finely chopped fresh chives
    1 tablespoon olive oil
    Salt and pepper

    Recipe



    1. BLEND CHEESE Puree cottage cheese and boiling water in blender until completely smooth. Transfer to bowl, then whisk in sour cream, blue cheese, chives, and oil. Season with salt and pepper. Refrigerate at least 1 hour. Serve.
